Flour Note: If you don’t mill your own flour, you can substitute all-purpose flour 1:1 by weight in all of these recipes. For cup measurements, subtract 1–2 tablespoons AP flour per cup to match the lighter texture of fresh-milled soft white wheat.

Rosemary Shortbread

Ingredients (makes 24 cookies):

  • 225g (1 cup) unsalted butter, softened

  • 100g (½ cup) sugar

  • 260g (2 cups) fresh-milled soft white wheat flour (see note above if you don't mill your own flour)

  • 1 tsp dried rosemary, finely crushed

  • Pinch of salt

Instructions:

  1. Cream butter and sugar until light.

  2. Add flour, salt, and rosemary. Mix just until dough forms.

  3. Roll into a log, chill 30 minutes, slice into rounds.

  4. Bake at 325°F (160°C) for 15–18 minutes.

Kid-Safe Note: Rosemary is safe for all ages in culinary use, but reduce to ½ tsp for a milder flavor that kids love.

Citrus & Cardamom Sugar Cookies (One of our favorites!)

Ingredients (makes ~3 dozen):

  • 300g (2 ½ cups) fresh-milled soft white flour (see note above if you don't mill your own flour)

  • ½ tsp baking soda

  • ½ tsp salt

  • 115g (½ cup) butter

  • 100g (½ cup) sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 tsp finely grated orange zest

  • ½ tsp ground cardamom

Instructions:

  1. Cream butter, sugar, and egg.

  2. Mix in vanilla, zest, and cardamom.

  3. Add dry ingredients and mix just until combined.

  4. Chill 1 hour; roll and bake at 350°F (175°C) for 8–10 minutes.

Kid-Safe Note: Cardamom and orange zest are perfectly safe for kids and smell incredible while baking.

Lavender Honey Loaf Cake

Ingredients:

  • 250g (2 cups) fresh-milled soft white flour (see note above if you don't mill your own flour)

  • 2 tsp baking powder

  • ½ tsp salt

  • 175g (¾ cup) butter

  • 150g (¾ cup) sugar

  • 3 eggs

  • 120ml (½ cup) milk

  • 2 tbsp honey

  • 1 tsp dried lavender buds (culinary grade)

Instructions:

  1. Cream butter, sugar, and honey.

  2. Beat in eggs one at a time.

  3. Add dry ingredients alternately with milk.

  4. Fold in lavender buds gently.

  5. Bake at 350°F (175°C) for 45–50 minutes.

Kid-Safe Note: Lavender is safe in small culinary doses. For young children, reduce to ½ tsp or swap for lemon zest.
